Nathalie had a crush for a small house hanging on the hillside above the hamlet of Cosprons, overlooking the bay of Paulilles, in the very south of France.
It are her friend winemakers, who pushed Nathalie to produce Banyuls vinegars. With a stubborn and contagious tenacity 'The Guinelle' became vinegar producer and quickly became a reference for artisanal vinegar above all benchmarks!
