Description:
Grapes are picked up manually and immediately passed through a crusher and de-stemmer and passed into small tanks. Alcoholic fermentation is processed by selected indigenous yeasts and lasts for 15/20 days with skins contact and temperature around 24/28°c. Shuffling is operated according on the characteristics of the grapes, malolactic fermentation is naturally achieved through temperature control.
The fermentation tanks are made of stainless steel, that allow precise control of the temperature. Following a vertical vinification process, grapes are moved without the use of any pumps, only through natural gravity force. Cups are punched down through pneumatic pistons.
Bottled without filtering, this wine has an ageing projection that goes from 3 to 10 years.
