Description: Grapes are hand picked when concentration of sugars, acidity and polyphenolic compounds reaches the established levels, nearly at the first decade of October. They are put accurately in small crates and grapes are removed from the vines in the same day (de-stemming). Immediately after being crushed and de-stemmed, the grapes are passed into small tanks. Alcoholic fermentation is processed by selected indigenous yeasts and lasts for 15/20 days with skins contact and temperature around 24/28°c. Shuffling is operated according on the characteristics of the grapes and of the vintage. Malolactic fermentation is naturally achieved through temperature control. The fermentation is processed into stainless steel tanks. Following a vertical vinification process, grapes are moved without the use of pumps, only through natural gravity force. This wine is refined for two years in French oak barriques (different origins, woods, pores, treatments, roasting) and for one year in bottles. Bottled without filtering, this wine has an ageing projection that goes from 3 to 10 years.
